Cauliflower Rosti
A low-carb version of the traditional rosti, sans egg or flour. The real thing

Ingredients
- 1 medium head of cauliflower about 500g, grated
- 1-2 tablespoons potato starch as the binder
- 2 tablespoons grated parmesan cheese optional, for extra flavor
- 2 cloves garlic minced
- Salt and pepper to taste
- 1-2 tablespoons olive oil or butter for frying
Instructions
Prepare the Cauliflower:
- Grate the cauliflower using a box grater or a food processor.
- Roast the cauliflower in a 150°C oven for 20 minutes to reduce water.
Mix the Ingredients:
- In a mixing bowl, combine the grated cauliflower with the potato starch, parmesan cheese (if using), minced garlic, and salt and pepper.
- Mix until the mixture holds together.
Shape the Rostis:
- Take a small portion of the mixture and shape it into small patties.
- Flatten them slightly for even cooking.
Cook the Rostis:
- Heat olive oil or butter in a skillet over medium heat.
- Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
