Ingredients

  • 1 medium head of cauliflower about 500g, grated
  • 1-2 tablespoons potato starch as the binder
  • 2 tablespoons grated parmesan cheese optional, for extra flavor
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1-2 tablespoons olive oil or butter for frying

Instructions

Prepare the Cauliflower:

  • Grate the cauliflower using a box grater or a food processor.
  • Roast the cauliflower in a 150°C oven for 20 minutes to reduce water.

Mix the Ingredients:

  • In a mixing bowl, combine the grated cauliflower with the potato starch, parmesan cheese (if using), minced garlic, and salt and pepper.
  • Mix until the mixture holds together.

Shape the Rostis:

  • Take a small portion of the mixture and shape it into small patties.
  • Flatten them slightly for even cooking.

Cook the Rostis:

  • Heat olive oil or butter in a skillet over medium heat.
  • Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
